Mt. Defiance Dark Rum Our rums are made using panela from Columbia. Panela is an unrefined whole cane sugar made by the boiling and evaporation of sugarcane juice. It combines the best features of molasses and fresh cane juice used in most rums. We double distill our rum in small batches using a copper pot still. Our dark rum is aged for one year in small used rye whiskey barrels. A touch of caramelized sugar is added before bottling. Mt. Defiance Dark Rum has a vanilla and oak nose, caramel, chocolate and roasted almond on the palette, with a light note of toasted marshmallow on the finish.
